Holy Cross Show with David Wilkerson, Episode 6 - November 30, 2006
College students do a lot of learning, but they can teach as well. In this podcast, student Neumann Jones tells us all he knows about the art of napping. (And he knows a lot!) We also get a glimpse into dorm life and Chef Dan and Father Thomas are back with the Ramen recipe and “nota bene.”
4 packs of uncooked Ramen
1 16 oz bag of dark chocolate chips
14 drops of peppermint extract
2 drops of spearmint extract
2 drops of wintergreen extract (The extract amounts can vary.)
24 lollipop sticks or popsicle sticks
Optional: ½ tsp butter
Crush dry uncooked ramen noodles into a bowl to about the consistency of bulky oatmeal or rice krispies. DO NOT crush finer or the recipe doesn’t set. Set aside.
Lay out wax paper. In a saucepan or double boiler, melt chocolate chips until they become smooth and creamy. If desired add butter. (Chef Dan skips the butter.) Slowly add mint extracts to the chocolate. Stir for one minute.
Quickly pour over your crushed Ramen and stir vigorously until completely covered. Immediately spoon mixture in tablespoons onto wax paper into round cookie shapes. Mixture will flatten and spread considerably, so leave lots of space in between.
Place a stick into each cookie before it hardens. Let cook completely (for about an hour). Peel and eat! You can individually wrap these and freeze for use later. They last a LONG time in the freezer. Well not that long.

In each new podcast new secrets are uncovered and new frontiers are explored. This week, the Ramen recipe takes a path through uncharted territory: dessert! Listen for Chef Dan’s Ramen treat with ingredients like chocolate chips, peppermint extract and spearmint.
Other guests include HCC Professor Mike Griffin who discusses his philosophy class (and how much he loves the Detroit Tigers!), student Randy Ebright who lets us know some details about the College’s annual trip to Peru and of course, no podcast would be complete without Father Thomas and nota bene.
There is no Ramen recipe to report on from last week, because Chef Dan knew everyone would be home eating their parents’ cooking over fall break.

Holy Cross Show with David Wilkerson, Episode 4 - October 13, 2006
What could be more exciting than cheerleaders? David interviews two members of the Saints squad in this edition of the Holy Cross Show with David Wilkerson. He also gives you a rare glimpse into college life as he records his roommate performing a stunt for the audience to enjoy. Don’t cry real tears though. There is no Ramen Recipe! Chef Dan said it wouldn’t be necessary since all the students will be home eating at their parents’ house for fall break. Here is last week’s recipe to ease the pain:
Ramen Noodle Recipe #2
1 package Chicken Ramen Noodles (not crushed)
2 Small eggs, beaten
2 oz Cheddar cheese cut into small cubes
2 oz Chopped bacon
2 Tbsp Chopped tomato
2 Tbsp Chopped green onions
Boil Ramen Noodles via normal methods. Cook bacon to desired crispness. Drain all water from the noodles. Add eggs, bacon, cheese, tomato and onions. Place on medium heat and stir well. Cook for a few minutes (until eggs are done). Alternatively, cook the onions with bacon to soften them.

As the semester gets into full swing there’s more and more for host David Wilkerson to talk about in the Holy Cross Show! Athletic action is heating up and Dave talks to assistant hockey coach and HCC student Greg Meola. Dave gets serious for a minute and interviews student Jay Dunne about the Africa Faith and Justice Network, and Chef Dan tells us how to make Ramen Noodles a breakfast food.

1/3 cup natural peanut butter
1 tsp garlic powder
2 tbsp lemon juice
2 tbsp soy sauce
1 tsp sugar
1/3 cup water
Sprinkle of cayenne (to taste)

Graduation, Keynote Address, Cardinal Peter Kodwo Appiah Turkson - May 13, 2006
Ghana's first cardinal, Peter Kodwo Appiah Turkson, received an honorary degree from Holy Cross College during this year's commencement ceremonies. Graduation, Richard Seniff Speech - May 13, 2006
Richard Seniff, A.A.’93, welcomes the class of 2006 to alumni status. In his speech, Seniff talks about going back to college as an “untraditional student” when he was more than 40 years old. He says the attention and care from the Holy Cross College community helped him succeed in college and in life. Seniff went on to become St. Joseph County sheriff and is now a college professor.

Academic Convocation, Dr. A. Rashied Omar - March 29, 2006
South African Imam Dr. A. Rashied Omar speaks on “Islam between Violence and Peace” at Holy Cross College’s Academic Convocation on March 29, 2006.
Omar is a native of Cape Town, South Africa. He earned a master’s degree in peace studies from the University of Notre Dame and a Ph.D. in religious studies, specializing in religion and violence, from the University of Cape Town. Between 1985 and 2002, Omar served as the imam of a mosque in Cape Town. He is currently teaching Islamic Ethics at Notre Dame.
